I won’t call myself a health freak, but you know how emotional we ladies get when it comes to the topic of losing weight🤪 And we as Mothers consider it our Holy duty to feed the kids every thing they dislike😂
My little one thinks I’m obsessed with trying anything and everything new that could give me a chance to feed him some vegetables 😈
Trust me, am not that crazy🤭😂
Recently I got enlightened about KETO! Though I couldn’t incorporate them all into my routine, but there are recipes which can be easily adapted to suit our menu and satisfy our taste bud!
So today I decided to try a dish loved by all in the Family, SPAGHETTI with TOMATO sauce and minced meat … yumm But there is a twist… We use ZUCCHINI in place of traditional Spaghetti 😉
Let’s do it!!!
- Zucchini (one large, cut like noodles)
- Minced meat of your choice
- Inion (finely chopped)
- Ginger & garlic(finely chopped)
- Tomato sauce (marinara sauce is handy, but since I had none available on hand I decided to make my own sauce)
- Green chilies
- Dried thym
- Italian seasoning
- Red chili powder
- Black pepper powder
- Salt to taste
- Oil for cooking
- Cheese (traditionally Parmesan is sprinkled but I had mozzarella and cheddar available, and I decided to go with cheddar)
There are various apparatus available for cutting vegetables into noodles. Do we start by cutting one large zucchini.
Now we make the tomato sauce if store bought is not available.
Take two or three large tomatoes depending on the amount of meat and spaghetti, take few green chilies, blanch them together and blend them all together. The tomato sauce is ready to be used!
In a pan heat up some oil and add the chopped onion, ginger and garlic. Sprinkle salt to half the sweat and cook faster. We don’t need to brown the onions, after they turn translucent, add the minced meat and mix. Now it’s time to add the dry spices. Italian seasoning, dried thym, red chili powder, black pepper powder and mix them all together.
Cook till the meat turns brown, now add the tomato sauce, put the flame to low, and let it simmer for at least 10-12 minutes. Keep stirring now and then so that it doesn’t stick to the bottom. The mixture starts leaving oil from the side. If it looks a little dry, don’t add water, cause zucchini has lots of water. And the consistency will be good when you add the zucchini.
We are ready to add the zucchini.
Mix and let it cook for 6-8minutes. Zucchini cooks fast and I prefer it a bit crunchy!
Sprinkle cheese on the top and the dish is ready to be served!!!
A small change can make such a huge difference, you won’t believe it until you try it! I felt this healthy version tastes even better because there is no guilty feeling after you had it😝😄 Trust me, it’s really yummmmy!!!
