Healthy food is good but now and then our taste bud does crave something different. Something that awakens the parts of our taste bud that gives us the satisfaction and enjoyment of eating!
So for my weekend kitchen experiments, I decided to try stuffed bread fritters. Filling, spicy and crunchy🤤
- Bread (1 for each fritter)
- Water to soften the breads
- Potatoes (boiled, peeled and mashed)
- Onion (finely chopped)
- Green chilies (chopped)
- Ginger (finely chopped)
- Cashew nuts (cut into bite size pieces)
- Cumin seeds (whole)
- Coriander powder
- Red chili powder
- Aamchur (dried mango) powder
- Salt to taste
- Oil for deep frying
Heat up a tablespoon oil in a pan, add the whole cumin seeds and let them splatter. Add the chopped onion, ginger, green chilies, cashew pieces and salt. Fry them for 3-4 minutes, add in all the dry spices, mix everything properly and add the mashed potatoes. The flame can be switched off now. Mix the spices well with the potatoes and leave to cool.
In a plate take a few tablespoons of water, take the bread and just touch it in the water and start pressing it between the palms of you hands to make it thin.
Pro tip: Don’t add too much water, it shouldn’t get soggy.
Once you are happy it’s sheet-like, turn it sideways like a diamond, and a spoonful of the filling.
You can shape it any way you want, I decided to do it this way
Make sure there are no cracks or no big openings, otherwise the filling might come out while frying.
Heat enough oil for deep frying. The oil should be medium hot. Start adding the fritters 2-3 at a time, don’t overcrowd. Fry on one side till the colour starts turning brown. Turn on the other side and repeat. On the whole, it will take around 5-6 minutes to get fried. Fry them all in the same way,
Now the stuffed bread fritters are ready to be served with salads and the dip of your choice. I normally serve them with fresh coriander chutney but today I feel like trying them with some sriracha 🌶 sauce 🤤
